1/2 cup finely diced cooked chicken or pork 2 T salad oil 1 3oz can sliced mushrooms 4 cups chilled day old cooked rice 1 finely chopped green onion 2 T soy sauce 1 egg well beaten
Brown meat in hot oil, add mushrooms, rice, onions and soy sauce. Continue to fry over low heat for 10 minutes, stirring frequently, and well beaten egg and continue to stir fry for another 5 minutes or until dry enough to be fluffy. Add additional soy sauce if you prefer darker color.
