2 tbsp olive oil
small onion, chopped
1 tbsp crushed garlic
4 c. crushed tomatoes
4 c. tomato juice
12-14 chopped basil leaves
1 cup or so whip cream
1/2 c. unsalted butter
pepper to taste
salt to taste
fresh parmesan to taste

Directions:
In large sauce pan, saute onion in olive oil until browned. Add tomato and juice and simmer. Add basil, cream, butter and stir over low heat. Stir in salt, pepper, parmesan cheese to taste and serve it up hot.

This recipe is courtesy of my friend, Jill. The girls love it. They say it is a good substitute for le Madeline tomato/basil soup.
