1 lb chicken breast, deboned (cut in 1/2" slices)

Marinade
1 clove garlic
2Tbsp. soy sauce
1/2 lemon, juiced (or 1 line, juiced)
1 tsp. sugar

Peanut sauce for dipping
1/2 cup chunky peanut butter
1/2 tsp.
cayenne pepper
1Tbsp. grated fresh ginger
1tsp. soy sauce
2Tbsp. chopped scallion's

Directions:
Directions:
Marinade chicken for 2 hours or overnight. Grill chicken over coals with sliced red and yellow peppers. Brush peppers with olive oil while grilling. Serve chicken with peanut sauce.

Sauce
Combine peanut butter with 1/2 cup water and whisk until smooth. Add cayenne pepper, ginger and soy sauce and whisk until blended. Sprinkle with scallions and serve room temperature.
