Perfect Rhubarb Pie Recipe

4 cups sliced fresh rhubarb
4 cups boiling water
2 C. sugar
3 tbs flour
1 tsp quick cooking tapioca
1 egg
2 tsp water
butter
pastry for double crust pie (9")

Directions:
Directions:
Place rhubarb in colander and pour water over it. Set aside. In bowl combine sugar, flour and tapioca; mix well. Add drained rhubarb and toss to coat. Let stand for 15 minutes. Beat egg with water and put in rhubarb mixture, mixing well. Pour filling into unbaked pie crust and dot with butter, put on top crust and cut slits in top crust.

Bake at 400º for 15 minutes and then reduce heat to 350º and continue baking for another 40-50 minutes or until crust is golden brown and filling is bubbly.

My favorite for delicious rhubarb pie. I use frozen rhubarb as well, just barely defrost and add dry ingredients while still slightly frozen.
