Can Do Carnival Cake
2 c. flour
1 c. brown sugar (packed)
1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/2 c. shortening
1 1/4 c. milk
3 eggs
1 1/2 tsp. vanilla
1/2 6oz. pkg. choc. chips finely chopped (or use mini chips)
Put all ingredients into a mixing bowl. Blend 1/2 min. on low.

constantly. Beat 3 min. on med. speed., scraping bowl occasionally.
Pour into greased and floured (2) 8 or 9 inch round layer pans. Bake
40-45 min. at 350
degrees, until toothpick inserted in center comes out clean.

Creamy Nut Filling
1/4 c. brown sugar (packed)'
2 Tbsp. flour
1/2 c. milk
2 Tbsp. butter
1/2 c. chopped nuts
2 tsp. vanilla

In saucepan mix sugar and flour. stir in milk. heat to boiling,
stirring constantly.
Boil and stir for 2 minutes. Remove from heat. Stir in butter, nuts,
and vanilla.
Cool.

Frosting--I use a chocolate butter cream frosting for top and sides.
Or...
Glossy Chocolate Frosting
1 6oz. pkg. chocolate chips
1 Tbsp shortening
1 tsp. vanilla
1/4 tsp. salt
1 1/4 c. confectioner's sugar
3 Tbsp. milk
Combine chocolate chips and shortening. Melt in microwave. Remove.
Stir in
vanilla and salt. Beat in sugar alternately with milk.
