2 - 8 oz. pkgs cream cheese (low or non-fat work fine)
1/3 c. powdered sugar
1 - 6 oz pkg dried cranberries
1 - 15 oz. can crushed pineapple, drained
1 c. chopped toasted pecans
1 c. shredded coconut
1 small (11 oz) can mandarin oranges, drained
8-9 toasted pecan halves

Directions:

Mix cream cheese and sugar. Add cranberries reserving 1/4 cup. Stir in pineapple, chopped pecans and 3/4 c. of the coconut. Form into a ball or press into a pretty dish. Sprinkle with the remainder of the cranberries and coconut. Dump the mandarin oranges onto a paper towel to remove more liquid. Decorate the edges with the mandarin orange sections and whole toasted pecan halves.

Serve with vanilla wafers, ginger snaps, cinnamon grahams, or pita crisps.

This makes a large amount and can be easily halved. You can also add other dried fruit, maraschino cherries, etc. to suit your taste. Makes a nice brunch item.
