cup flour
tsp. each of salt, pepper, paprika
6 boneless skinless chicken breasts
cup olive oil
1 medium onion, chopped
4 cloves garlic, chopped
4 stalks celery, chopped
2 carrots, chopped
1 cups warm chicken broth
1 cup sliced mushrooms
1 small can sliced stuffed green olives

Combine flour and spices in plastic bag. Toss chicken pieces in the flour mixture. Heat oil in large skillet over medium heat. Brown chicken pieces for 4-5 minutes on each side and then place in bottom of Pyrex casserole dish. Use the remaining oil that is in the skillet to cook chopped ingredients for about 10 minutes, stirring occasionally. Spoon over chicken in the casserole. Pour broth over chicken and vegetables. Bake covered for 90 minutes. Add mushrooms and olives to the casserole and return to oven for 10 more minutes.
