Filling
3 egg yolks (reserve egg whites)
1/2 cup lemon juice
7 tbsp. corn starch
1 & 1/2 cups sugar
1/4 tsp. salt
1 & 1/2 cups hot water
2 tbsp. butter
Meringue
3 (reserved) egg whites
2 tbsp. sugar
1tsp. vanilla
1tsp. cream of tarter

Filling
Stir together filling ingredients. Cook over med. heat until thickened. Pour into a baked 10 inch pie shell.
Meringue
Beat (reserved) 3 egg whites until stiff peaks, while slowly adding sugar, vanilla and cream of tarter. Put on top of pie, forming decorative peaks. Bake at 350º until golden brown.
