2 cups 1-inch diced watermelon cubes, chilled
2 cups 1-inch diced cucumber cubes (peel scored with a peeler), chilled
1/4 cup thinly sliced red onions
8 mint leaves, rolled and cut into thin chiffonade strips
1/4 cup crumbled feta cheese
2 tsp toasted coriander seeds, crushed
3 Tbsp extra virgin olive oil
1 Tbsp red wine vinegar
salt and freshly ground pepper, to taste
