3 ripe but firm Anjou pears
Freshly squeezed lemon juice (about 3 lemons)
3 oz. crumbled sharp blue cheese
1/4 c. dried cranberries
1/4 c.walnut halves, toasted and chopped
1/2 c. apple cider
3 T. port wine
1/3 c.light brown sugar
1/4 c. olive oil
6 oz. baby arugula
s/p to taste

Peel the pears and slice them lengthwise into halves. With a melon baller, remove the core and seeds.Trim a small slice away from the rounded sides of each pear so they will sit without wobbling. Squeeze some lemon juice over pears to prevent browning. Arrange them core side up in a glass baking dish.
Toss blue cheese, cranberries, and walnuts together in a small bowl. Fill each pear with the filling ,mounding it in the wells.
Combine cider, port and brown sugar in a separate bowl (stir to dissolve sugar) and then pour mixture on and around pears.
Bake pears at 375º for 30 minutes, basting twice.
While pears are baking, whisk olive oil and lemon together, add s/p to taste, and toss with arugula.
Place lettuce on plates, top with pear, drizzle each pear with some of the basting liquid and serve.
