1 to 2 pints grape tomatoes
1 to 2 cloves fresh garlic (minced)
1/2 cup white wine
1/2 cup grated Parmesan cheese
olive oil to coat
salt and pepper to taste

Directions:

Toss first four ingredients together and place in a non-stick pan ( I use a cake pan)
Add olive oil to coat
Salt and pepper to taste
Roast at 350º until tomatoes begin to breakdown
and juices are released (about 45 minutes)

This is my "go to" sauce for any kind of pasta that you would normally use a marinara. Ravioli, angel hair, etc. It gives it a fresher taste. Add basil and fresh mozzarella for a variation. Enjoy!
