"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
1 1 lb. 2-oz. package Oreos, divided (use cookie including the cream filling)
1 8-oz. package cream cheese, softened
1 bar Almond Bark or candy coating

Directions:
Directions:
Finely crush cookies in food processor or place them in a Ziploc bag and crush into a fine consistency. Stir in softened cream cheese and refrigerate until dough is chilled. Remove from refrigerator and roll the mixture into 1 inch balls. Place balls on cookie sheet and place in freezer to set up but do not let them become frozen solid. Melt chocolate in microwave. Remove balls from freezer and dip balls into chocolate, covering entire ball. Place cookie balls on wax paper to dry. When coating has dried, refrigerate the cookie balls.

Personal Notes:
Personal Notes:
Tips: Cookie balls must be refrigerated because of the cream cheese. If cookie balls sweat from being in the refrigerator, gently wipe coating with a paper towel before serving.
If extra flavoring is desired, add extract to the cream cheese.
