1 tbsp. canola oil
1 medium onion - cut in rings
1 tbsp. minced garlic
1 c. dry green lentils - rinse and drain
1 lb. whole small mushrooms (halved)
4 medium carrots - thinly sliced
2 stalks celery
4 c. water
14oz can vegetable broth
1/4 tsp salt
1/4 tsp. pepper
1/4 head red cabbage or green (2cups) set aside

In 4 quart pan, heat oil over med. Add onion and garlic. Cook for 5 min. Add rest of ingredients. Bring to boil. Lower heat to simmer, covered, until Lentils are tender. About 25 min.

Top with cabbage
