Prime Rib from Gordon's

Directions:
Preheat oven to 300F. Place prime rib on an elevated roasting rack in a shallow pan. Pour 1/4" water in pan. Keep prime rib out of water.

Heat through until internal temperature reaches:

132F for rare
138F for medium rare
144F for medium
150F for medium well
155F for well

I cooked an 8.33 lb. roast for 3 hours in roaster pan and it came out perfect! 300F for first 1/2 hr., then lower to 250F for remaining time.
