Large Boboli Pizza Crust
2 c. cooked chicken, cut into large bite-sized pieces
2 c. Smoked Gouda Cheese, shredded
Red Onion, cut into thin wedges
BBQ sauce of choice
Directions:
Directions:
Mix chicken and your favorite BBQ sauce in large bowl, til all chicken is coated. Spread on Boboli or other pre-cooked pizza crust. Add red onion. If you like it saucy, add more BBQ sauce. Sprinkle generously with smoked gouda cheese and bake until done.

375º or 400º -- 10 - 15 minutes

We always ordered this from the California Pizza Kitchen on our annual treks to Washington, DC, We decided to recreate it at home. For some reason, it never tasted quite right, so I finally called down to the restaurant and asked for the recipe. My mistake was using mozzarella instead of smoked gouda. Once I made the switch, the pizza turned out great. I use KC Masterpiece for the sauce. The restaurant has since closed in that location...glad I got the recipe when I did!
