1 lb carrots, sliced
4 green onion tops, chopped
6 Tbsp butter, melted
6 Tbsp flour
1 tsp salt
2 c. milk
1 (8oz) package old English Cheese, grated
1/2 c. crushed potato chips

Directions:
Directions:
Steam or boil carrots and onion tops in salt water until tender- crisp and drain. Make sauce by melting butter, adding flour and stirring for 2 minutes over low heat. Add salt and milk; stir with a whisk until bubbling and thick. Stir in grated cheese and continue beating until cheese is melted. Combine drained carrots with sauce, turn into a 2 qt casserole and top with potato chips. Bake @ 350º until browned and bubbling around the edges about 30 minutes.
