6 c. zucchini, peeled, seeded & chopped
4 c. sugar
1/2 c. lemon juice
1 c. crushed pineapple, drained
2 3 oz. pkgs of Jell-o (apricot, berry, etc.)

Directions:
Directions:
Boil zucchini in water for 10 minutes. Remove, drain and mash. Mix with sugar, lemon juice, and pineapple. Boil 10 minutes. Remove from heat, add Jell-o. Stir well. Seal in jars.

Mom and I made a lot of jam in the 1970's using this recipe! You can use any flavor of Jell-o and the zucchini soaks up the flavor. The pineapple gives it texture. Our favorite Jell-o flavor to use was peach or apricot, but any kind of berry or orange Jell-o works well. Tip: grape Jell-o did not work out well.
