Ingredients: 4 slices of reduced fat bacon 1 large onion, chopped 4 large potatoes, peeled and cubed 3 (6oz.) cans minced clams ¼ tsp. Natures’ Season 2 ¼ cup skim milk 2 tbsp. reduced fat margarine 3 tbsp. all-purpose flour

Directions:Begin by preparing bacon in a nonstick skillet over medium heat. When the bacon is crisp, remove from the skillet and place it on a paper towel to drain. After it cools, crumble bacon into small piece for later use. Leave bacon drippings in the pan. Add onions to the pan with bacon drippings and cook until transparent. While the bacon and onions cook, cover potatoes with water and bring to a boil. Cook potatoes for about 15min. or just until fork tender. Remove from heat and drain. Pour the onion and potatoes into a large sauce pot. Add minced clams, including the clam juice and stir in Natures’ Season. Place the sauce pot over medium heat and bring to a boil. Reduce the heat and add 2 cups of skim milk and margarine. Cover and continue to simmer for about 15min. While the chowder simmers, combine ¼ cup of milk with flour. Stir until the flour dissolves. Pour the flour mixture into the chowder and stir. Continue to simmer for about 10 more minutes to allow the mixture to thicken. When ready to serve the chowder, ladle it into individual bowls and top with crumbled bacon. Makes 6 servings. |
