Mashed Potatoes:
2 large Baking Potatoes (or more)
1/4 c. nonfat sour cream (or more)
Salt
Pepper

Filling:
1 medium Onion, peeled and chopped
1 T. Oil
2 cloves Garlic
1 tsp. Cumin (1 1/2 tsp.)
1 can Stewed Tomatoes (14 1/2 oz.) + juice
2 T. Ketchup
1 1/2 c. Frozen Corn
2 1/2 c. Frozen Peas and Carrots
1 15 oz. can Kidney Beans + juice
Salt
Pepper
1 Bay Leaf

Directions:
Directions:
Make mashed potatoes. Add sour cream and salt and pepper to taste.

Prepare filling: Saute onions and garlic. Add the rest of ingredients. Let simmer for 1/2 hour or so. Add some water if it gets too thick.

Pour mixture into a baking dish or dishes. Smooth the potato mixture on top. Bake in preheated oven at 400º for 20 minutes or until filling is bubbly.
