1 cup lard softened and or whipped
4 cups masa harina
2 tsp baking powder
1 cup brown sugar
3-3/4 to 4 cups warm water
1 cup walnuts
1 cup raisins

Directions:
Directions:
Work lard into masa, baking powder and sugar, really well. Add all the water. At first this may seem like a lot of water but as you work the water and stock into the masa by hand and get rid of all the lumps the water is absorbed. Work the masa till it is light and fluffy. Add walnuts and raisins. Mix thoroughly. Soften corn husks by soaking them in warm water. Place mixture in corn husk, tie and steam 45 minutes.

VARIATION: Omit nuts and raisins. Add preserves to the center of the masa before rolling up and tying the corn husks. Steam for 45 minutes. These can be a little bit messy as the preserves will get runny when tamales are steamed.
