1/2 C Butter
3/4 C Brown Sugar
1 Egg
4 Ripe Bananas
1 t Vanilla
2 C flour (whole wheat works well)
1 t Baking Soda
1/2 t Salt
3 C Oatmeal
1 t Cinnamon
Chocolate Chips
Nuts

Directions:
Directions:
With a mixer, cream butter and sugar then add egg, bananas and vanilla. Mix until bananas are mashed.

Add remaining ingredients and mix until combined.

Drop by spoonfuls onto ungreased cookies sheet.

Bake at 350 for 10-12 minutes.

These cookies are a staple in our house. With the bananas, whole wheat flour, and oats, I have minimal guilt about eating these for breakfast.
