Cheese of your choice, some of our favorites include goat,havarti & bocancini

Wash and dry tomatoes. Slice horizontally into 3 sections discarding top and bottom. Slice cheese and set aside. To assemble drizzle small amount of olive oil, place tomato, stack cheese, stack tomato, basil leave, cheese and insert toothpick through top.

I originally made this recipe with a Komato tomato or a brown tomato which was fabulous, however these are not always easy to come by at your local farmers markets or grocery stores.
