3 c sweet potatoes, cooked and mashed
c margarine
5 eggs
2 c sugar
1 c evaporated milk, undiluted
1 tsp salt
1 Tbsp vanilla
tsp nutmeg
Mini-marshmallows

Directions:
Directions:
Combine all ingredients, except marshmallows, mixing well. If potatoes are cold, heat margarine. Pour into a greased 9 x 13 inch baking dish. Bake at 375 for 45 minutes; add mini-marshmallows and put back in oven under the broiler and broil until marshmallows begin to brown. Watch carefully so marshmallows do not burn. This recipe also makes 2 pies. Use 9-inch deep dish pie shells; bake at 375 for 45 minutes or until tops are golden brown.
