1 lb. ground beef
1 c. diced celery
1 medium diced onion
3/4 c. minute rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 can water
1 can of chow mien noodles

Directions:
Directions:
Brown hamburger in skillet, add celery and onion and cook until celery is tender. Stir in soups and water; add rice and stir. Bake in greased casserole at 350º for 30 minutes covered, then 30 to 40 minutes uncovered. Last 10 minutes sprinkle with chow mien noodles. (Usually we put the noodles on our plates and spoon the casserole over them: this keeps the noodles from getting soggy if the casserole isn't all eaten at once). This dish reheats well.

This is Jerry and the kids favorite casserole. Quite often I take it to people's home when they've lost a loved one. That's why Jerry calls it Funeral Casserole.
