10 oz bacon
2 lbs Yukon gold potatoes,sliced
¾ cup shredded Gruyre cheese
1½ cups cooked shredded chicken
2 tablespoons fresh thyme
1 cup sliced leeks
1 tablespoon minced garlic
salt and pepper

Directions:
Directions:
Heat oven to 450º. Line 8" skillet with bacon covering bottom and side and leaving a third hanging over sides. Sprinkle thyme over bacon. Layer half of the potato slices evenly over bacon and thyme. Cover entire surface. Sprinkle ¼ cup cheese. Repeat layering with chicken and ¼ cup cheese. Continue layering with leeks, garlic and remaining potato slices. Salt and pepper and cheese. Fold bacon strips to center of skillet being careful not to overlap. Cover skillet with foil. Transfer to stove and cook over medium heat for 10 minutes. Place in oven and roast for 30 minutes. Remove foil and roast until bacon is crisp and potatos are tender about 30 minutes. Let rest, rain bacon grease. Loosen edges to serve.
