Potatoes (Yukon Gold are wonderfully creamy) - quantity depends on number you are serving. Do not peel,
Extra-virgin Olive Oil
Salt and fresh ground Pepper

Directions:
Directions:
Quarter unpeeled potatoes.

Boil potatoes in well-salted water until tender.

Drain well. Add a little olive oil and mash. Add additional olive oil as needed to get a coarsely smooth finish. Salt and pepper to taste.
