(for cooking chicken)
3 large boneless chicken breast
1/2 medium sized onion
2 garlic cloves
8 c water to cover chicken
(chicken in sauce)
4 tbsp oil
1 large onion finely chopped
2 garlic cloves
6 chipotle chiles (canned in adobo)
1 tbsp of adobo sauce from canned chile
1/4 c water
salt to taste
1 package of tostadas
2 c crumbled queso fresco (garnish)
2 c sour cream (garnish)

In a large sauce pan combine the chicken breast, onion, garlic, and the 8 cups of water. Cook on medium high heat until chicken is done. Remove chicken to cool. Shred chicken breast with fork and set aside
In a large skillet with a lid heat oil and onion that have been finely chopped saute on low medium heat until onions are translucent. While the onions are cooking, place the garlic, chipotle chiles, adobo sauce, and water in blender and blend well once the onions are soft rise the heat to medium high and pour blended sauce into skillet and stir cook sauce for 1 to 2 min add in shredded chicken and cover with lid. reduce heat to low and let it shimmer for 15 min stirring often
Take one tostada and spread 1 tbsp of sour cream. Place 1/3 of tinga on top and spread evenly. Top with crumble queso fresca and more sour cream
