Ingredients:  
1 c. diced chicken (or shred already cooked rotisserie chicken)
2 tbsp. butter
2 tbsp. onion
1/4 c. flour
4 c. chicken broth
1-4 oz. can mushrooms
1 c. half and half
Dash of salt and pepper
1 package of long-grain and wild rice (I use Uncle Ben's 23 herbs and seasoning)

Directions:
Brown chicken. Saute the onions in butter, add flour, then broth. Add remaining ingredients in order. Slowly simmer for an hour or more.
