3 cups hot mashed sweet potatoes
(about 6 medium, cooked and peeled)

2 T butter
2 cups sugar
1 t baking powder
1 t nutmeg (I use fresh and grate my own)
1 t cinnamon
3 eggs
1-cup buttermilk
1 t baking soda
2 -8” unbaked pie shells, or 1- 10” unbaked pie shell

Directions:
Directions:
In large bowl combine sweet potatoes and butter. Combine sugar, baking powder, nutmeg, and cinnamon, stir, and then add to the sweet potatoes. Beat eggs until frothy. Add soda to buttermilk. Mix all ingredients. Then I pour into blender and stir until smooth. Pour into unbaked pie shell. Bake 10 minutes at 400 degrees. Reduce heat to 300 and bake about 45 minutes.
