3/4 c. shortbread cookie crumbs
1/4 c. butter, melted
2 eggs, separated
1 can Eaglebrand sweetened condensed milk
1/3 c. lemon juice
1/2 t. lemon zest
3 T. sugar
Directions:
Directions:
1. Combine crumbs and butter for crust and topping. Pat crumbs in 9x9 pan. Reserve 4 T. crumbs for topping.

2. Beat egg yolks until thick and lemon-colored. Combine with milk. Add lemon juice and zest. Stir until thick.

3. Beat egg whites until stiff, Gradually beat in 3 T. sugar. Fold into lemon mixture.

4. Pour mixture into crust and freeze until firm. Serves 6 - 8.
