2 egg whites
1 T. instant coffee
1/8 t. salt
9 T. sugar
1 1/2 T. vanilla
1 1/2 c. heavy whipping cream
1/8 t. cinnamon
2 3/4 T. toasted almonds

Directions:
Directions:
Chill mixing bowl and beaters or whisk in freezer for 1/2 hour. Using chilled bowl and whisk or beaters, mix egg whites on high until well blended and slightly stiff or peaked. Add sugar, instant coffee, vanilla and salt. Blend thoroughly, then add whipping cream slowly until mixed and beat until soft peaks form. Be careful not to over mix or the mousse will become grainy. Pipe mousse into champagne glasses and top with toasted almonds and cinnamon. Freeze until 1/2 hour before serving.
