3 cups milk
½ cup butter
¼ cup sugar plus another ¼ cup and 2 T.
1 cup rice (uncooked)
3 eggs, separated
1 tsp. grated lemon zest
1 tsp. vanilla
3 apples, peeled, cored and sliced or grated
raspberry or maple syrup, to serve

Preheat oven to 350 ⁰. Grease a soufflé dish. Bring milk to a boil. Add ¼ cup of butter, ¼ cup sugar and rice. Cook until rice is done (about 15 to 25 minutes). Cream remaining butter and sugar; add egg yolks and beat until foamy; add lemon zest, vanilla and cooked rice. Beat egg whites and then fold them into the rice mixture. Pour half the mixture into the greased soufflé dish, arrange apples on top and then pour in the remaining mixture. Bake for 45 to 60 minutes. Serves up to 8. Serve plain, or with raspberry sauce or maple syrup.
