3 cups cooked carrots,cut in 1 inch chunks
1/3 cup orange juice
1/4 cup Sherry (Kosher for Passover)
1 (17 oz.) can of sweet potatoes, sliced
1/3 cup honey
1/2 cup pineapple preserves or apricot preserves
8 - 10 pitted prunes, quartered
8 - 10 dried apricots, quartered
1/4 tsp. ground ginger
1 T. sugar
1/8 tsp. ground cinnamon
pinch of salt

Directions:
Quickly blanch carrots to fork tender (but not mushy) and then drain. Preheat oven to 300⁰. Put drained carrots in a large bowl. Add remaining ingredients. Gently mix everything together. Transfer to a greased 2 quart casserole. Bake, covered, for 2 ½ to 3 hours. Serve warm.

This can be made ahead and refrigerated and then reheated, but I would be hesitant to freeze it because the carrots would turn to mush!
