1 head Red leaf
1 head Romaine lettuce
1 small purple onion sliced into thin rings
2 small cans mandarin oranges, drained
Jicama, sliced into thin strips 1" long
Sliced caramelized almonds
3 Tbsp. white sugar
1/2 tsp. grated orange rind
2 Tbsp. red wine vinegar
2 Tbsp. white sugar
1/3 cup orange juice
1/2 cup oil
1 Tbsp. Good Seasons Italian Dressing (dry)

TO CARAMELIZE ALMONDS: Sprinkle 3 Tbsp. of sugar over sliced almonds. Heat in a skillet on medium heat until sugar melts and almonds are candy coated. Cool on tin foil before adding to salad.
Tear lettuces into pieces, add onion, drained mandarin oranges, jicama, and cooled almonds. Mix rest of ingredients together for dressing and pour over salad.
