3 quarts 1/2-1/4" thick sliced cucumbers in a glass bowl
Pour boiling water over cucumbers into bowl
Change water every morning for 4 days, keeping covered
On day 5, drain water mix 3 quarts cold water and 1 tsp. powdered alum, cover for 3 hours, drain.
Meanwhile, mix together:
1 1/2 pints white vinegar
7 cups sugar
2 Tbsp. salt
2 Tbsp. Pickling spices (place in cheese cloth, tie tight)
1 Tbsp. green food coloring
Heat to boiling, pour over cucumbers.
For 4 mornings, drain syrup into a pan, bring to a boil, reuse - pour back over cucumbers, and cover.
On 4th or 5th morning (I've lost count), leave syrup on cucumbers, place cucumbers into pint jars, pour remaining syrup into jars.
Seal bottles for 5 minutes in a hot water bath.
