2 chicken breasts, diced
2 garlic cloves chopped
pinch of nutmeg
2 tbsp. olive oil
1 small onion diced
1 can (14 oz) of diced tomatoes with basil and oregano
5 cups of chicken or vegetable broth
1 fresh Anaheim Chile, chopped
1 tsp oregano
1/2 tsp. thyme
salt
pepper
1/2 eggplant
1 sweet potato
3 stalks of celery

Directions:
Directions:
Chop and saute veggies and chicken. Add broth, tomatoes and spices. Bring to a boil and reduce heat.
Simmer 35 minutes
