1 quart fresh berries
1 cup sugar
1/2 cup minute tapioca
1/2 teaspoon salt
2/3 cup boiling water
2 cups berry juice drained from berries
1/2 cup cream, whipped

Directions:
Directions:

Crush berries slightly, add sugar and let stand 30 minutes. Add tapioca and salt to water. Cook in double boiler 15 minutes, or until tapioca is clear, stirring frequently. Add berry juice to the tapioca mixture and chill. Pour half this mixture into parfait glasses. Chill until firm. Fold cream into remaining tapioca mixture. Chill. Just before serving, top with crushed berries.
