1 1/2 tablespoons butter
8 tablespoons flour
1 cup sugar
1/4 teaspoon salt
2 cups water
2 egg yokes
1 lemon grated rind of 1/2 the lemon, but the juice of the whole lemon
2 tablespoons confectioner's sugar
2 egg whites
1 pie shell baked

Directions:
Directions:

Melt butter, add flour, sugar, salt, water, and beaten egg yokes. Mix well. Cook over hot water in double boiler until thick, stirring constantly. Remove from fire, add lemon juice and rind and mix well. Pour into a baked pie shell. Cover with meringue made by beating the confectioner's sugar into the stiffly beaten egg whites. Bake in moderate oven , 300º until the meringue is done. About 25 to 35 minutes, and sometimes even longer.
