"Plain fresh bread, its crust shatteringly crisp. Sweet cold butter. There is magic in the way they come together in your mouth to make a single perfect bite."--Ruth Reichl

Ingredients:
Ingredients:
1 cup butter (2 sticks)
1 cup flour
4 cups milk
1 lb Cheddar Cheese grated (we use med, sharp, or even spicy jack)
4 eggs
Salt and Pepper
Broken toast

Directions:
Directions:
Cook butter and flour together until slightly browned and thickened. Stir in milk and cook until you have a thickened white sauce. Stir in cheese until melted and hot. Once the sauce is hot, stir in the eggs (they scramble up, thicken and turn into a cheesy, saucy scrambled egg mixture). Salt and pepper to taste.
Serve scooped over broken up toast.

Personal Notes:
Personal Notes:
More eggs may be added (we like 6) if you want to make it more like scrambled eggs with sauce rather than sauce with some eggs.
Served at holidays and family events. This is something we grew up with and has been something I make for my children.
