4 boneless chicken breasts
Mojo marinade
8 c. romaine lettuce, bite size chunks
Parmesan cheese
croutons, if desired

Caesar Dressing:
1/2 c. olive oil
2 shakes Worcestershire sauce
2 cloves garlic, crushed
1 egg
1 tsp. dijon mustard
2 tsp. lemon juice
lots of freshly ground pepper

Directions:
Directions:
Marinade chicken breasts in mojo marinade for at least 30 minutes.
Grill or bake chicken, turning and basting frequently with remaining mojo marinade.
Cut meat diagonally into strips and set aside.

Whisk all dressing ingredients with fork. (add extra lemon juice if necessary)

In a large bowl toss romaine with dressing and croutons. Put lettuce on plates, crisscross chicken strips and sprinkle with Parmesan cheese.
