1 T. olive oil
1 boneless pork loin roast (3 lb.)
2 tsp. salt
1/2 tsp. pepper
1 medium onion, chopped (1/2 c.)
2 cans root beer (3 c.), we use A&W
1 bottle chili sauce
1/2 tsp. salt
12 whole wheat buns

In a skillet, heat oil over high heat; cook pork 6 to 10 minutes to brown on all sides.

In a crockpot, place pork roast, 2 tsp. salt, pepper, onion and 1 c. of the root beer. Cover and cook on low for 7-8 hours.

30 minutes before serving, heat remaining root beer, chili sauce and 1/2 tsp. salt in a sauce pan or Dutch oven. Bring to boil over medium-high heat. Reduce heat to medium. Cook 8-10 minutes, stirring occasionally, until mixture is glossy and reduced to 2 1/2 to 3 cups.

Remove pork from slow cooker, discarding cooking liquid. Shred pork, using 2 forks to pull apart. Stir in chili sauce mixture. To serve, spoon about 1/2 cup pork mixture in each bun.
