2 T. butter
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder
3 medium carrots, cut into 1/4 inch slices
2 medium onions, cubed
2 medium green peppers, cut in 1/2 inch slices
2 medium yellow squash, cut in 1/4 inch slices
2 medium zuchini, cut into 1/4 inch slices
1 lb. fresh mushrooms, sliced
1 c. (4 oz.) cheddar cheese

Directions:
Directions:
Combine 1/2 c. water, butter, salt, pepper and garlic powder in a Dutch oven and bring to boil.

Add all vegetables and simmer for 15 minutes. Add mushrooms and simmer 3 to 4 minutes more.

Pour into a 13x9x2 baking dish and sprinkle with cheddar cheese. Broil until cheese melts.
