3 c. shredded carrot
2 c. flour
2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
4 large eggs
3/4 c. vegetable oil
1 tsp. vanilla

Cream Cheese Frosting
1 (8 oz.) cream cheese, softened
1/2 c. butter, softened
1 (16 oz.) powdered sugar, sifted
1 tsp. vanilla extract

Grease three 9-inch round cakepans and line with wax paper; grease and flour wax paper.

Combine first 7 ingredients in a large bowl; add eggs, oil and vanilla, stirring until blended. Pour into pans.

Bake at 350º for 25 minutes. Cool in pans on wire racks for 10 minutes; remove from pans and cool completely.

Frost with Cream Cheese Frosting in between layers and on top and sides. Chill.

Cream Cheese Frosting
Beat cream cheese and butter at medium speed with a mixer until fluffy; gradually add sugar, beating well; stir in vanilla.
