1 package filo dough

Whole Package Filo 1/4 Package

Cheese Filling:
4 eggs well beaten 1 egg
1 pound dry cottage cheese 1/4 pound
1 pound feta cheese 1/4 pound
pepper
Mix all ingredients and set aside

Meat filling:
4 tsp. finely minced onion 1 tsp.
4 tsp. butter 1 tsp.
2 pounds ground beef 1/2 pound
4 tsp tomato paste 1 tsp.
4 tsp. chopped parsley 1 tsp.
salt and pepper to taste

Chicken filling:
4 tbsp. butter 1 tbsp.
8 tbsp chopped celery 2 tbsp.
4 cooked chicken breast 1/2's 1 1/2 breast
4 tsp.minced parsley 1 tsp.
salt and pepper to taste

Melt butter. Saute celery, onion and chicken. Add remaining ingredients. Chill.

Spinach:
3 packages (10 oz each) frozen spinach
1 large onion
1 clove of garlic
1/2 cup parsley
1 pound crumbled feta cheese
8 eggs beaten
salt
Squeeze water out of spinach. Saute onionand garlic and add to spinach. Add remaining ingredients. Mix well. Roll in filo. Enough filling for a whole package of filo.

Pastry
1 pound filo
1 pound butter
use 4 fillings or 1 adjust accordingly

Melt butter. Cut filo into fourths. Some packages are shorter in length on allow for only 3 cuts. Cover dough with damp cloth. Roll fillings. Fold in triangle shape. (work quickly, dough dries out) Place on a cookie sheet. Brush with butter. Bake at 350º for 15 minutes or until golden brown and flaky. Serve hot Freezes well. To reheat place frozen on cookie sheets and defrost. Bake 350º uncovered for 15 minutes. Brush with butter if desired.
