1 package of cream cheese
1/2 cup minced fresh dill (1 bunch)
2 green onions, finely chopped
1 tsp. grated lemon peel
1 tsp. ground black pepper
4 heads of Belgian endive (green and red)
8 oz. smoked fish
fresh dill sprigs

Directions:
Directions:
Mix first 4 ingredients in a small bowl. Season with pepper. (can be made up to a 2 days ahead). Bring to room temperature before using. Separate endive to leaves. Spread a small amount of cheese mixture on the base ends of leaves. Top with a fish piece. Garnish with a small sprig of dill. Arrange on platter cover and chill up to 6 hours.
