1/2 c. all purpose flour
2 eggs, lightly beaten
4 chicken boneless, skinless chicken breasts (1 lb)
1/4 c. grated Parmesan cheese
1/4 c dry bread crumbs
1 T butter, melted
2 large tomatoes, seeded and chopped
3 T fresh basil chopped
1 T olive oil
salt and pepper to taste

Directions:
Directions:
Place flour and eggs in separate shallow bowls. Dip chicken in flour, then in eggs. Place in a greased 9 by 13 baking dish.
Combine Parmesan cheese, bread crumbs and butter. Sprinkle over chicken.
Loosely cover baking dish with foil. Bake at 375 for 20 minutes. Uncover; bake about 10 min longer or until chicken juices run clear.

While chicken is cooking, combine remaining ingredients in a bowl. Spoon over chicken. Return to the oven for 3 to 5 minutes or until mixture is heated through.

This is a very simple and tasty dish to make. I even use the tomato topping recipe to make a bruschetta appetizer.
