5 onions, sliced
3 T. olive oil
2 T. balsamic vinegar
1 T. brown sugar
12 oz. ready prepared puff pastry
1 cup finely grated Parmesan cheese
9 anchovy fillets, drained
1 cup black olives, halved
2 T. dried oregano

Directions:
Directions:
Place onions and oil in pan over medium heat. Cook, stirring until onions are soft and golden. Add balsamic vinegar and sugar and cook for 2 minutes. Set aside to cool. Roll out pastry on lightly floured surface until it is 1/8 inch thick. Trim pastry to a roughly rectangular shape. Place onto a baking sheet lined with parchment paper.
Top pastry with cheese, leaving a ¾ inch border. Top with onions, anchovies, olives and oregano. Bake for 25 min. in a 400⁰ oven or until golden and puffed. Serve warm in slices.
