3 sticks of butter
1 cup fine dry bread crumbs
1/4 cup grated parmesan cheese
1 1/2 tsp. basil leaves
1 1/2 tsp. oregano leaves
1 tsp. garlic salt
1/2 tsp. salt
1/4 tsp. pepper
3 boneless chicken breasts, cut up
1/2 cup white wine
1/2 cup sliced green scallions
1/4 cup chopped fresh parsley

Preheat oven to 350º. Melt butter. Combine bread crumbs, cheese, basil, oregano, garlic salt and salt. Dip chicken in melted butter then coat with crumb mixture; reserving remaining butter. Place chicken, skin side up, in ungreased 10-inch pan. Bake for 50-60 minutes or until chicken is fork tender.

Meanwhile, add wine, green onion and parsley to reserved butter (about 1/2 cup). When chicken is golden brown, pour butter sauce over chicken. Continue baking for 5 minutes.

My Mom, Jo-Anne, started making this dish when I was just a little girl and I dream about it until she makes it for me again. Her trick is that she always makes extra of the coating and butter sauce. As a main meal, this is one of my top 3 favorites.
