6T Extra Virgin Olive Oil
2T Red Wine or Balsamic Vinegar
Salt and Pepper to taste
4C Melon balls (cantaloupe, honeydew, casaba)
2T finely sliced red onion
1t chopped fresh oregano
1C seedless red grapes
2 bunches arugula, rinsed, stems removed (approx. 2C—I used mixed greens)

Directions:
Directions:
Combine oil, vinegar, salt & pepper in a bowl. Whisk together.
Add melon, onion & oregano. Toss to coat.
Let stand at room temp for 30 min.
Just before serving, add chilled arugula (greens) and grapes.
Toss to blend.

Serves 4
