1 1/4 c. flour
1/4 c. sugar
1/2 t. salt
4 t. bkg. powder
1 egg, beaten
1 c. milk
3 T. melted shortening or vegetable oil
3/4 c. Maypo Maple Cereal
(1 t. maple extract, optional)

Directions:
Directions:
Preheat to 400º oven.

Mix and Sift flour, sugar, salt and baking powder. Add cereal, beaten egg, milk and oil. Mix well then pour into greased muffin tins. Bake 15 minutes. Note: I like to add 1 t. maple extract for extra flavor. I also sprinkle muffin tops with sugar as soon as removed from oven, for extra sweetness and extra calories!
